Opeth are one of those bands that it's difficult to recommend individual tracks as they probably are better represented in the context of an album's body of work.
Their sound has completely changed over the years as they evolved musically. From their death metal beginnings they grew ever more progressive as time went on (As with Katatonia and Anathema for other prime examples)
My favourite Opeth album is the outstanding Blackwater Park from 2001.

Two years later the Damnation album featured no death metal vocals or heavy riffs and was very 70's inspired. Here's the delightful Death Whispered a Lullaby from that album.

I saw them in 2006 at Manchester Academy (Paradise Lost supported) now a regular venue for them is The Royal Albert Hall.
