Are we talking 'organised crime' as a worldwide thing so I can have Yakuza and Triad films rather than just the traditional Italian-American gangsters?

That's my understanding, yes. Films about gangsterism regardless of country and language. That's why I've included both the Godfather and Infernal Affairs trilogies.

I'd call that a crime drama rather than one about gangsterism – they were freelance bank robbers rather than members of a structured criminal organisation. As such, films including Hell or High Water, Reservoir Dogs, Heat, Inside Man or Dog Day Afternoon wouldn't count either.

Was thinking chiefly about Beatty's hat

Replace that with Bugsy Malone then

A gangster is a gangster, whether it be pushing a pen or robbing banks with a shotgun. Stop nitpicking, Nos!!

By that rationale, The Shawshank Redemption would make Andy Dufresne a gangster!

Also, films like Wall Street and Glengarry Glen Ross would be gangster films.

What I'm trying to say is that there is no difference between blue collar and white collar crime.
