It would appear that the current UK Metallica tour features a different cover song played at each venue, and a different jam during the bass and guitar solo spots:

Oct 22 - O2 Arena, London: Die, Die My Darling (The Misfits)/Kirk & Rob's solos incl. London Calling, Immigrant Song and Anesthesia
Oct 24 - O2 Arena, London: Last Caress (The Misfits)/Kirk and Rob's solos incl. Phantom of the Opera, Ace of Spades, and Anesthesia
Oct 26 - SSE Hydro, Glasgow: Blitzkrieg (Blitzkrieg)/Kirk and Rob's solos incl. Hair of the Dog and Anesthesia
Oct 28 - Manchester Arena: Stone Cold Crazy (Queen)/Kirk & Rob's solos incl. Don't Look Back in Anger, Love Will Tear Us Apart & Anesthesia
Oct 30 - Birmingham Genting Arena: Am I Evil? (Diamond Head)/Kirk & Rob's solos incl. War Pigs and 'Anesthesia

'Tallica have also possibly got a new live DVD in the offing

'Professionally filmed Footage' of 'Stone Cold Crazy' live in Manchester has just been released. Why would they have a film crew there if they are not planing something?

You only have to look on Blabbermouth to see pro shot footage from every or at least several shows. My guess is most big bands film their shows nowadays.

After all as you suggest why not release a live dvd at some point.

Metallica definitely record and film all their shows, you can buy them from a dedicated website Livemetallica.com I think
Certain old shows are free too, but the quality isn’t all that good, almost old school bootleg level quality

The good thing about most of those songs on the list is that artists well and truly made it their own. Particularly the Anthrax, Marilyn Manson, G'n'R and Limp Bizkit ones.

Guns n Roses’ version of Live and Let Die has been in almost every set my band has played since around 2011, it never gets boring and is a guaranteed crowd pleaser
I like the Wings version, but G n R’s is superior imo, much like their cover of Knockin on Heavens Door

Their version of Sympathy for the Devil is pretty neat, too. Not better than, but on par with the original.
